Choice of entree: prime rib empanadas with house hot sauce; beetroot with horseradish, juniper berry and beef crumble; or grilled intercostals with burnt celeriac and miso. Choice of main: The Cut Prime Rib Burger; 200g Pure Black Wagyu topside MB9+, tallow-aged 14 days; or 200g Cape Grim Black Angus prime rib. Mains served with a mustard-scented leaf salad and shoestring fries. A la carte, the Wagyu topside alone is $70 and the prime rib alone is $79 — this set gets an entree on top of a comparable cut for $59 total.
